A Recap of Grocery Hauls & Long Walks!

Good morning! It’s Sunday and going to be a gorgeous, sunny day and I plan on taking full advantage of the weather. If I drank coffee, I’d be having one right now, but instead I’m sipping on a watermelon sparking water and letting the breeze come in through the window. The week went by really fast, and I got a lot done, but I really wish time would slow down sometimes. Even though Fall is my favorite season, the speed at which life is traveling scares me.

Sunday, I took Oliver for a long walk and spent my time at my parents’. I also had to get a few things for the week and ended up buying a few different frozen items. Part of it is for convenience – I have tried ricing my own cauliflower and am not a huge fan of the amount of work and the mess, but these frozen items aren’t super-inexpensive and they’re easy to work with.

I worked Monday through Friday. I don’t talk about work too much because there’s not much to say. My smoothies are almost always the same; I just change up the greens between different types of kale, spinach, and Swiss chard, and I don’t always use the same berries. I do use hemp seed oil, collagen peptides, and Amazing Grass greens along with chia and ginger.

For lunch, I had a big salad with Bibb lettuce, Romaine, avocado, mushrooms, yellow peppers, and tomatoes.

When I got home, I wanted to make tacos and cauliflower rice after my arm workout. I decided to try the Beyond Meat fiesta crumbles. I love the Beyond Meat burgers, but there was something about the texture of these that I didn’t totally love. They were still good. I always add onions and garlic to my cauliflower rice and let the rice cook in the veggies for a while so it becomes more aromatic and flavorful.

Tuesday, I threw the leftover cauliflower rice and Beyond crumbles into a salad of Romaine, cherry tomatoes, avocado, and peppers and had a taco salad for lunch. When I got home, I did a yoga session for flexibility and had a Strawberry Serenity kombucha. Later, Julian and I went for a little drive to enjoy some of the weather.

Wednesday, I had “spaghetti and meatballs” with vegetarian meatballs and a pasta made out of spinach and lentils. This was actually a really good combination and I’d eat it again!

When I got home after work, I wanted to do a full-body workout. I used my resistance band to do a series of leg circuits (hip thrusts, donkey kicks, fire hydrants, leg raises, etc.) and also did circuits that focused on supporting my body weight, like various styles of planks and push-ups. After, I made a weird dinner of broccoli and zucchini chips. For the chips, I just sliced thin, brushed with olive oil, seasoned with salt, pepper, paprika, garlic, onion, and cayenne, and baked at 400 degrees for 20 minutes.

Thursday was another long day. Instead of coffee, I drink tea. I am a big tea lover and usually have several varieties around. These are some of my favorites.

I had leftover broccoli and zucchini for lunch. When I got home, I went to go meet up with my best friend to walk our dogs. I was excited to see her because it had been a while, and I wanted to congratulate her on a big move she made recently.

We are super-chatty and usually end up talking for hours. I can always expect to spend at least an hour talking in the car even after we’ve gone out, but I love it! It’s nice to have someone you really enjoy being with, and it’s especially cool to be friends for so long! We walked the pups for a few miles and then threw some tennis balls for them while we shared some Prosecco. I saw a beautiful, electric-blue hummingbird in my mom’s garden.

I was really happy it was Friday. I had more zucchini pasta for lunch with some Beyond crumbles and mashed avocado, and I also had a kiwi and Kind bar for a snack. After work, I came home to do another full-body workout but this one had more cardio. I did squat jumps, burpees, kicks, punches, and sprints. I ran for about a mile outside after and then came home to make dinner. I made the new Aldi veggie burgers for me and the Trader Joe’s Chile lime chicken for Julian, with a side of mashed cauliflower. We didn’t end up doing anything. I just read for most of the night.

I was up early Saturday to run some errands and fit my workout in. I did the leg circuit I posted the other day and then ran a mile after. It was pretty intense and I am sore today! I straightened up for a bit and knew I’d be planning on a hard seltzer later. I like these because they are low in sugar and carbs, but my brother will not stop sending me “the claw” memes!

I made a quick lunch of turkey, avocado, and lettuce roll-ups and then took a walk in one of the wooded parks before heading to Target, where I picked up some things for the week. I went in for dog food and walked out with this – the memes are real!

I’m excited to try the chickpea pasta. The banana chocolate chip is my favorite Lara bar flavor, and the new reusable water bottle is so cute and was inexpensive!

Later, I felt like going out because we hadn’t done much or spent a lot of time together since this week was so busy and we work different hours. I also felt like putting on something other than workout clothes.

Julian and I decided to go out to eat to Burger Antics. As usual, I got the black bean veggie burger. I forgot what he got, but it had all kinds of weird stuff on it. He is pretty adventurous when we go there. I think it had pork shoulder and a pork rind and cotija cheese and jalapenos – a weird pile of meat on top of meat, but he liked it.

I realized that I still have a similar style to what I was into in high school and it makes me laugh sometimes. I wonder if I will be 50 years old and still wear “all black everything” and have green hair. We can only hope. I think it’s so important to be yourself and not let society dictate what you should and shouldn’t wear, especially if it makes you free and happy. Some people aren’t fans of hair dye or piercings or tattoos, but I usually just respond with something like, “Good thing you don’t have it, then” and drop it. As cliche as it sounds, life is too short to not do what you want, dress how you want, etc. So have fun!

After, we decided to stop at Brixie’s for a drink before going home. I got something called Elvis Juice. It was pretty good, a little fruity.

When we got home, we were both exhausted and went to bed kind of early. Today, I have to head out to Tinley to see my grandma and will probably take Oliver with to get him some fresh air. I plan to either walk or run the trails and enjoy the weather. I hope you all have a great week!
