Potato Tacos with Fiesta Sauce

Have you ever had a purple potato? The first time I saw one, I wasn’t sure what to think. I thought it would be sweet or maybe taste more like a carrot or beet than a potato. Well, the purple potato has tons of antioxidants, minerals, vitamins, and fiber, so it’s one healthy vegetable! Aldi sells a tri-color bag of red, gold, and purple potatoes, and they’re small and easy to work with, and I can feel good ab0ut the nutrients I am getting (even if they are a little higher in carbs). These go perfect with potato tacos, one of my favorite fast vegetarian meals.

To serve two people two tacos each, I cut up about 10-20 mini potatoes and slice them thin. This will help them cook faster. I found my favorite potato seasoning at a dollar store! It is a blend of salt, pepper, garlic, onion, and paprika, and it’s awesome.


I cook the potatoes in a regular frying pan with avocado or olive oil and add the seasoning. While cooking, I cover them. This will help them get softer faster. Then, within the last few minutes (after they are cooked to softness), I take the cover off and let them brown.

The “sauce” is really just seasoned sour cream. You can also use plain Greek yogurt. There are so many different things you can do with this, but mine is a simple “to taste” version.

I use about 1/4 cup sour cream, a tablespoon of cider vinegar, and then one teaspoon each of onion powder, garlic powder, paprika, black pepper, cayenne, and sugar substitute. I also add some dashes of hot sauce. Usually I would use cumin or chile pepper, but I didn’t have those ingredients on hand! Just whisk together well.

Then, I assemble my tacos. Yup, this is super-fast and easy, and very simple to customize. I heated corn tortillas and spread them with the sauce. Next, I added the potatoes, a sprinkle of cheese, lettuce, and tomato. I also like to use avocado or guacamole, but I hadn’t been grocery shopping lately.

These were ready in less than 20 minutes and they were a great post-workout meal!

See, I really haven’t been shopping recently! The beer is my husband’s, but the refrigerator is mostly full of sparkling water, yogurt, some vegetables, hummus, and eggs! I can make meals with this, but it helps to have a little extra variety.

While I may not have gone to a food store lately, I have gone clothes-shopping! I picked up this adorable outfit for the summer, and the whole thing was less than $30. I have a few concerts I am going to this summer, and this is so comfortable that I can definitely see myself wearing this often!
